BAKING PUMPKIN SEEDS

OMG IT’S OCTOBER. I know it’s been October for almost two weeks now, but I’m just so excited because now that it’s getting closer to homecoming, Halloween, cool weather, and hot coffee, it’s finally appropriate to start all of the fall festivities! I’ve been planning on carving pumpkins and baking pumpkin seeds since like mid-September and my sweet boyfriend Lucas knew that; so, he and I went for brunch yesterday afternoon and then he took me to the pumpkin patch where we got two cute medium sized pumpkins and spent the rest of the day carving them and cleaning off the seeds!

So, after we carved our pumpkins and prepared the seeds for seasoning and baking, I went to go workout for an hour, ya know so the seeds could dry, and Lucas and I were going to go buy the seasoning so we could bake them when we got back! Or so I thought. When I came home, I smelled something in the oven. The smell was sweet and yummy so I turned to my Dad and asked, “Are you making cookies?” He turns to me and says, “No they’re the pumpkin seeds!”

Yeah. My little sister decided it would be a great idea to bake the pumpkin seeds that Lucas and I put aside for us to make, the second after I left. You have no idea how livid I was, lol. But because I have the most wonderful boyfriend, Lucas insisted we get in the car and go buy some more pumpkins. We drove to fresh market, bought two more medium pumpkins, dug out all of the seeds and prepared them to bake, finally.

It was actually quite funny because Lucas was having trouble carving his first pumpkin, so he was excited to try it again. Actually, he was more just determined to do better than my first pumpkin, lol. But anyways, after drawing his face on the pumpkin, he started to carve and not even 5 minutes into it, his pumpkin broke. I felt so bad, but it had me laughing so hard because he just does not have any pumpkin carving luck, lol. But he was a trooper.

MUSTARD

Yellow mustard seasoning

CINNAMON & MAPLE SUGAR

Ground cinnamon

Maple sugar

GARLIC SALT

Garlic salt

Pepper

We cleaned them off, dried them out, separated them into bowls, and seasoned them while they were still a little damp. Then, we put them onto a pan and seasoned them one last time before sticking them into the oven at 400 and leaving them in for about 25 minutes.
